Der Eingang zum Tempel der veganen Spitzenküche ist eher schlicht – und überraschend schmal. Das Seven Swans am Mainkai kann man leicht übersehen, aber wer das Glück hat, hier einen Tisch zu bekommen, wird das Essen nicht vergessen. Küchenchef Ricky Saward übernahm das Restaurant 2018 und kochte zunächst vegetarisch. Dabei baute er seinen raffinierten Umgang mit regionalem Gemüse so entschlossen aus, dass er sich bald entschied, auch auf tierische Produkte wie Milch, Eier oder Sahne zu verzichten. Bis auf Salz und Rübenzucker kommt seine Küche sogar ohne Gewürze aus. Heißt: Volle Konzentration aufs natürliche Aroma. Karotten oder Pastinaken werden fermentiert, gegrillt, gedämpft oder pulverisiert und als kleine Kunstwerke mit größter Liebe zum Detail angerichtet. Speisekarten gibt es nicht im Seven Swans, dafür aber einen Chef, der seine Gäste gerne persönlich begrüßt. Apropos Gäste: Nur 17 finden Platz im Restaurant. Unser Tipp: Weit im Voraus reservieren!

Seven Swans on Mainkai is easy to miss, but if you're lucky enough to get a table here, you won't forget the food. Head chef Ricky Saward took over the restaurant in 2018 and initially cooked vegetarian dishes. He developed his refined approach to regional vegetables so resolutely that he soon decided to do without animal products such as milk, eggs and cream. Apart from salt and beet sugar, his cuisine even manages without spices. In other words: full concentration on natural flavours.
